A-Fib is no fun!

We've been told fixing A-Fib is difficult. It's a process of finding the right combination of procedure and medication. The right combination has not been found for Kay. On Tuesday he is going in for an Ablation. We are hoping that will help!

Things Come In 3's

I hope we can count 3's to the family not to one person. I had a tooth ache during the weekend and was in alot of pain. Went to the dentist on Monday and had a root canal done. My tooth is a little aching still from being worked on but I'm out of pain! I gave Kay the last shot yesterday, YEAH!!!! His leg doesn't hurt anymore so he his walking more and feeling better. He can move his arm just a little in front of him. I think we both are headed to recovery!

Pace Maker and Blood Cot

My husband has had Atrial Fibrilation for years where it would bother him for 24 hours and then settle down. About one week ago it started and wouldn't go away. His heart beat would jump around between 40 and 120. He went to the doctor and he suggested having an Ablation done. The next night his heart went really crazy so at 3 am Saturday he had me take him to the ER. The doctor told him to see the Cardiologoist that day. He was taken by Ambulance to the hospital in Murray. The Cardiologoist told him they were putting a pace maker in on Monday. He can't use his left arm for 6 days after that he can move it. He just can't lift if over his head. It will take 8 weeks to recover. Sunday night his calf hurt and he thought it was a charlie horse. It was uncomfortable to walk. We came home on Tuesday. The surgery went well and he had no pain with it. Wednesday morning he got this pain in his calf that brought tears to his eyes. He couldn't walk on that leg. He had me call the ambulance to transport him to the ER. They did an Ultra Sound and found out he has a blood clot. I have to give him a shot in his stomach every day for 6 days. This will make the clot adhere to the wall of the vein so that it doesn't move. He also has to take a blood thinner. You know how it's said things come in 3's, well I'm hoping that doesn't happen. I don't like giving shots because I don't like needles but we both have survived the first one. I'm lucky in that he is not a demanding patient!

Orange Chicken

I love Panda Express's Orange Chicken but the closet one is 2 hours away. I found 2 recipes that I combined to make a delicious version. I would add the juice of 2 oranges to make the flavor stand out. We loved it so much by the time I thought about taking a picture the food was gone!!

Chicken Coating for Sweet and Sour Chicken
Top Secret Recipes
2 lbs boneless chiciken pieces, skinned
1 egg
1 1/2 teaspoons salt
White pepper
1 tablespoon oil
Oil (for frying)
1/2 cup cornstarch
1/4 cup flour

Stir in egg, salt, pepper and 1 tablespoon oil and mix well. Stir cornstarch and flour together in separate bowl. Cut chicken into pieces. Add chicken pieces to egg mixture and then into cornstarch mixture. Heat oil for deep-fryihng in wok or deep-fryer to 375 degrees. Add chicken pieces, a small batch at a time and fry 3 to 4 minutes or until golden and crisp. (Do not overcook or chicken will be tough.) Remove chicken from oil with slotted spoon and drain on paper towels.

Orange Sauce
1/2 cup brown sugar
1/2 cup white wine vinegar
3 tablespoons soy sauce
Juice of one orange

After sauce boils add
1 tablespoon cornstarch
1 tablespoon water
to thicken

Cook chicken with
1 tablespoon sesame oil
1 tablespoon saki (rice wine)
Diced green onions
1/2 teaspoon cayenne pepper

I mixed the sauce with the chicken and served over rice.

Rocky Mountain ATV Jamboree Parade


The Jamboree runs Sept 14th - 19th in Richfield Utah. This year we tried to beat the Guiness World Record for having the most ATV's in a parade. The current record is 1632. I've heard that the unofficial count was 2100. We are waiting for everything to be submitted and approved to get the official count. It was fun to participate.






Skillet Peaches a la Mode

If you are like us and have a peach tree you are looking for ideas to use them. I found this at http://www.bhg.com/. I peeled the peaches. We love it!!!!


1 recipe Sugared Pastry, below
1/3 cup butter
6 to 8 peaches or nectarines, pitted and halved or quartered (about 2 lbs)
1/4 cup peach or apricot nectar
2 tablespoons packed brown sugar
1 cup fresh raspberries or blueberries
Fresh mint leaves (optional)
Vanilla Ice Cream

Sugared Pastry: Preheat oven to 375 degrees F. Let one 15-oz rolled refrigerated pie crust stand at room temperature 15 minutes. Line baking sheet with nonstick foil or parchment paper. Unroll crust onto lightly floured surface. Brush with 1 tablespoon melted butter. Sprinkle with 1 tablespoon coarse decorating sugar or granulated sguar and 1/4 teaspoon cinnamon. Cut pastry in half. Cut halves into strips, stars, hearts or desired shapes. Place on prepared sheet. Bake 10 to 12 minutes or until lightly browned. Cool on baking sheet on wire rack. Makes about 40 strips.

Skillet Peaches: Melt butter in 12-inch skillet over medium-high heat. Add peaches, skin side up. Reduce heat to medium; cook 4 to 5 minutes, turning once. Remove peaches to bowls. Add nectar and brown sugar to skillet. Cook and stir over medium heat 1 to 2 minutes or until sugar is dissolved and syrup forms. Spoon syrup on peaches. Top with berries, mint and Sugared Pastry. Serve with ice cream. Makes 4 to 6 servings.

Clouds at the Cabin

We were at the cabin and watched the clouds roll in. It would rain off and on. As the clouds got lower, you could watch them move across the meadow. It was amazing!!!






As we went down the mountain we could see how the clouds were around Big Lake with the sun coming through.



We were also delighted to see a rainbow.

Bryce Canyon, Utah

We had some out of state family here for a reunion, so we spent the day at Bryce Canyon. Kay's brother and sister-in-law rode with us. We found 3 geocaches while there. We stopped at Ruby's Inn for there buffet. It was a great day!!!!!

Armadillo Potaotes

I found this recipe at http://www.familyfun.com/. I didn't take the time to get the crumb mixture into the slits of the potatoes but it turned out great. I didn't peel the potatoes either. This is a keeper!!!!

1/4 cup bread crumbs
1/4 cup grated Parmesan cheese
1 tablespoon paprika
Salt and pepper to taste
Olive oil
6 Idaho potatoes, peeled and cut in half lengthwise

Heat the oven to 450 degrees F. In a bowl, mix together the bread crumbs, cheese, paprika, salt and pepper and 1 tablespoon of olive oil. Set the mixture aside. Transform each potato half into an armadillo by cutting 9 or so notches 1/2 to 1 inch deep in the rounded top. For each armadillo, cut a square of aluminum foil big enough to loosely wrap around it, brush the center with olive oil, then place the potato on it, flat side down. Sprinkle the top with some of the crumb mixture, pressing it into the grooves, then seal the potato in the aluminum foil. Arrange all of the foil-covered potatoes on a baking sheet and bake them for 40 to 45 minutes. Open the pouches carefully they will be hot and full of steam. Makes 1 dozen armadillos.

Graduation

My sister went to Ameritech College and graduated in Medical and Dental Office Management. She was on the Dean's List and had perfect attandance. She was chosen as a speaker for her department. I'm so proud of her!!!!! Congratulations Mary!!!!

Lumberjack Competition

We watched part of the Lumberjack Competition at Thanksgiving Point in Lehi, Utah. ESPN was recording the competition to be aired at a later date. We enjoyed our experience!!
