We enjoyed this recipe. It was a different way to have mexican food!!!
1 lb of leftover beef roast
1 can (10 oz) diced tomatoes with green chilies
1 medium onion, chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1 can (15 oz) black beans, rinsed and drianed
3 cups hot cooked rice
1/2 cup shredded cheddar chese
Sliced ripe olives
Sliced green onions
Guacamole
Heat beef, tomatoes, onion, garlic and seasonings. When close to serving add the beans to heat through. In individual bowls, layer the rice, meat and bean mixture. Top with cheese, olives, onions and guacoamole.
